Traditional “Osterfleck”: so yummy!

Sick and tired of the usual chocolate bunny? We have something truly indulgent for you: traditional “Osterfleck”. Try our recipe!

Everyone loves baking around Easter time. Traditional “Osterfleck”, for example, that godparents gift their godchildren on Easter day in Austria. Even I, a dog, can't resist its smell. It tastes soooo good, let me tell you. But it's best if you just bake it yourself. Just follow my recipe – it’s easy.

What you’ll need:

  • 250g plain wheat flower
  • ½ packet of yeast
  • 2-3 tbsp crystal sugar
  • 100ml milk (lukewarm)
  • 1 tsp vanilla sugar
  • 1 egg yolk
  • 1 shot of rum
  • Lemon zest
  • Sultanas to taste (or none, if you prefer)
  • 1 pinch of salt
  • Almond slivers for sprinkling
  • Butter and flour for the in
  • Whisked egg white for coating

And this is how it’s done:

Soak the sultanas in rum. Crumble the yeast into lukewarm milk, add a pinch of salt and the sugar. Sprinkle a little flour on top and let the yeast rise until the first cracks appear. Add the yolks, the remaining flour, the vanilla sugar, and the lemon zest, and knead into a smooth dough. Place in a bowl, cover, and leave to rise in a warm place. Then, add the sultanas, knead again, and let rise. In the meantime, butter and flour a round cake tin. Roll out the dough into a round patch the size of the cake tin, place in the tin, and leave to rise again. Then brush the “Osterfleck” with the egg white. Sprinkle with almond slivers and bake at approx. 170 °C in the preheated oven until golden brown.
